Well there is a similar truck on YouTube https://youtu.be/3g7c1DJzYsM that made 230/270 to the tire. Now I'm 4wd so I'd expect idk 5-10 less than that. Im not expecting big numbers just a fun little truck.

Ok on the 350 HP ~, that sounds like it will be great truck.
I usually run in the same area for HP, may last one I increased the connecting rod length by 0.500", in theory the long rod should increase the jewel time at the bottom and top go the stroke, in turn increasing HP and Torque. Time will tell, it is still in the barn on the stand.
The spare block and a stroker kit... is it a newer block, similar to the 5.0L blocks, the newer blocks have a better rear main seal and replacement is easier than older 302s.
I always wanted to build a 327 cu. in. engine, a 331 stroker kit but without boring the block 0.030" over. I think that would be a great sized Small Block Ford.
A friend of mine built an '86 B-II, put in a Jasper Engine 5.0L, 345 HP, it was more than powerful enough. His truck was on the cover of I think it was 4WD, but it was one of the Off-Road Magizines.
