I was thinking... while reading, SMOKE come out of my ears, before insulation/wall board, maybe put in some nailing/screw strips, so you can mount shelving... if needed; it would be easier now !
You could secure them between the uprights in the walls, screw through the uprights and into the Nailing strips. The size of the Nailing Strips would be based on what you want to do, me... (always have ideas)... I would put in 2x6's, that way they will have a little more stability and you can add 2x4s or Shelf Strips after the wall boards are up.
Just me thinking out loud AGIAN !
Not trying to tell you what to just suggesting things BEFORE the insulation/wall board is in place and you realize there is no where to mount the shelving... ask me how I know !

Finish the ceiling, paint it white... good light reflexion.
AND did you consider any skylights ?
I added six translucent light panels in the roof area of my Metal Barn... I don't need to turn the lights on in the Barn until the sun has set.
