So the truck is sitting on 265/75/16s.I mostly commute the truck for work, about 110 miles a day.Its in need of new tires, and I was debating going back to stock size(245s) for the sake of fuel mileage.  Does anyone have any experience going back to 245s, and did you regret it?

Why would you regret it?

I run stock 235/75/15 - if you're commuting a lot, you'll find the drive is easier with the stock tyre sizes.

In the concern of fuel mileage being your "most" concern, consider a new learning curve in your driving habits. Especially if you're someone with a little bit of a preppers mindset at all.. I'd rather where lighter shoes for the accelerator than lose ground clearance or other advantages a larger tire may provide.

With the exception of going from a Mudder to a radial type tire a 245 vs a 265 is within less than a .50" in width and sidewall. HOW much gas do you think you're going to save with a 1.5-2lb difference in tire weight on the outer corners for unsprung weight and rolling mass? That .50" in ground clearance at least in my eyes is more valuable than a few gallons of Gas and I'm not unsympathetic to the gas woes. I live in Vegas, damn near anything else considered civilization is at least 200 miles away in any direction, I always use Premium fuel, I'm generally loaded 400lbs more than stock with gear all the time, and I roll 33" DynaPro MT's which have a bit more lug than the avg mudder tire.

If anything, curb the heavy foot, save some money up, re-gear.

As an added note: ANY TIME you see the silly MPG numbers on ANY VEHICLE, no matter the make or model. They standard is held to exactly that. An established standard. Which means; When they are testing for CITY/HWY mileage, they are testing at 22.8MPH [CITY] and 55.4MPH [HWY].. IF YOU AINT DOING THAT, you're not gonna get the stated MPG. Those that live in Hilly or Hotter climates even less.

My point here is its not your tires brotha... 110 mile in each direction or not. Its either the WRONG vehicle for that use OR driving habits. :(

EDIT: and not to cast judgement or make too many assumptions, but looking at your vehicular harem you got going on, I didnt see a Prius in the mix and nearly everything you got there looks like it passes everything but gas stations... as a track guy, not only is it somewhat obvious you have a possible adrenaline addiction, I feel your pain.

 I'm not complaining about fuel mileage.  And in my ranger my foot is light.  The thought is more "since I need tires, the option exists to help the mileage or a little"
Ground clearance isn't a concern. I have other rigs for that.  I just want the truck to drive well.  
Honestly I've had cheap rigs to commute. I had a Saturn for a while that I replaced with a mazda protege.  But I got in a wreck and it was totalled. I only have my commute for another few months then I'm making a cross country drive.  So rather than get another commuter I bought something I'd enjoy and something I could give to my son.  So that's why you don't see a fuel sipper in my line up.

I see... Perhaps the first thought here is to determine what is meant by "drive well" or more importantly, your definition? Are we distinguishing that as overall ride or feel of the truck? Total absence of mechanical issues? Both or more than that?

I've squeezed 22.3 +/- MPG out of my 4.0L OHV a couple times, but that's it, just a c o u p l e of times. most times I get my 300-320 or so miles from my tank and that's it. Ive got well over 350K on my 93' now. Good news is I've found a 4BTa locally through a friend. Will hopefully see if the 30+ MPG is truly attainable and having the power/Tq I desire from it still.

What brand/type of tire are you running now outside of the already known and given size?

Ride quality and handling.  Frankly the ranger rides worse than anything I own.  I know it needs shocks too.  But my lowered lightning and lifted diesel both ride better.
Truck has 265/75/16 bfg at's on it.  A tire I'm pretty familiar with and normally don't have issues with.  The tires are of unknown age, so lord knows how poor of a condition the rubber is.  I'm hoping some new cooper at3s and bilstein shocks will make my pending cross country road trip a little more enjoyable

Dusten I am running the Cooper Discoverer AT-3's on my 00 Ranger & I love them. IMO they are a good riding tire with no noticeable noise on the highway. I could not tell you if the bigger tires had any bearing on my gas mileage because I usually do not care. I can go 1 week to & from work (22 mi each way) on one tank of gas.

I am running the Goodyear Wranglers. This is the first truck that I have had that the Wranglers are a crap tire. They an not good in the rain as they will side all over the place. Dry weather performance is great. Cold weather or moisture and they are slick. They are a 50k tire and I have 20k on them. I will probably change them early.

Sorry, i brought up fuel economy, it was a guess/suggestion, nothing more ;) Dusten, you've done well for yourselves - so far as ride is concerned, you'll get worse from the larger tyres, it's physics.

If you deviate from the stock sizing, 99% of the time, it will be a compromise, just something to bear in mind.

I will say that my Goodyears were crap, they didn't have much tread left on them, but the bigger issue was the random wobbling at higher speeds. I'm not kidding either, i thought it was out of balance wheels, but the wobbling wasn't regular enough, it was bad sidewalls on the tyres.

Anyway, seems the dampers go out a lot on these smaller trucks, replacing mine seriously improved the ride.

Lastly, just in case anyone thinks this; tyres are not sold with how many miles they can do, ever, never have been. In America, the mileage warranty is shoved up front and people led/let(?) believe it's how long the tread lasts.

Sorry, no deal, it's just a warranty on manufacturers defects, nothing more, some are higher than others due to construction quality/type etc.

Since I can't seem to multi quote I'll just blindly answer. Thanks for the heads up on the coopers.  All the reviews have been good. 
As far a shocks, these have been replaced with some trash rough country shocks.
No it's not Bigfoot, it's Autzen.  
I think on the tires I'll leave it too to cost. I'll get a quote on both sizes and up with what's cheaper

I've got a little 2.3L that is running a 4" spindle lift with 245x75x16 wheels/tires. I get about 25mpg, sometimes up to 27 depending on how I drive. I mainly do highway. I think once these tires are done I am going to go up to a 265. If I could find tires at Costco that were 255x75x16 that would be ideal but they don't seem to stock them. I'm not really wanting a wider tire, rather a taller tire.

You should be able to use this calculator and figure out the different tire/wheel sizes and how it affects ratios/gas.

Smaller tire can raise the rpms and in turn MAY give you better mpg !

Sounds like a plan !
You can always re-gear...  $$$, but once you get a tire size and look you like on the truck, for me it is 33's BFG-AT's,  I re-geared to make the engine work in it's sweet spot !
That's how I also make it 18mpg... once, and I think there was a 20 in there too !
