This has turned out to be a classic Monday and it is only lunch time. Our clothes dryer broke over the weekend. I pulled out my multi-meter and found the thermal fuse had blown. So I jumped the fuse to allow us the use of the dryer until I got a new fuse monday morning. This dryer is 20 years old and it toasts a thermal fuse every 4 to 5 years.

The first stress inducer was the appliance repair shop that I called and confirmed they had the thermal fuse didn't have one in stock, but could order it for me now that I was there. The second shop didn't have one either but he was just around the corner and I didn't call ahead to verify. I ended up making a half hour drive to the Sears Service center and picked up 2 thermal fuses for $3 and change. 

While I am out and about chasing down a thermal fuse for my dryer and I get a text from my wife telling me she wants Nachos for dinner tonight. I do most of the cooking since I retired. I know we have none of the ingredients except for the meat and spices. I stop at the grocery store and pull up my internet connection on my phone (android) and do a google search on "chicken nacho recipe". The very first hit is "Beefy Loaded Nacho Recipe | Wholly Guacamole®". Good job google!

I have long since given up on Google - pretty well every search I did ended up with results from the USA for chinese made stuff.... really helpful!

I use Duckduckgo on my computer and have tried to have it as the default on my phone. Every time I get a software update the android sets the default search engine back to google. The phone is a Galaxy S6 Active with AT&T and it updates every couple of weeks. I am waiting for the next model to come out to upgrade to the S-8 Active or possibly S-9. It should be at a price point that I can afford it by then.

Two chicken breasts cooked in enchilada sauce in the crock pot till it is so tender that it is falling apart.
Take a plate and put down a layer of chips, Mex blend cheese, chicken, and pico de gallo.
Next layer of chips, Mex blend cheese, chicken, Guacamole, jalape±os, and sour cream if you can't stand the heat.
Next layer of chips, Mex blend cheese, chicken, pico de gallo, and black olives.
Top layer is only Mex blend cheese and microwave until cheese is melted.
On top fresh cubed tomato chunks and lettuce after heating. 

It is comfort food. Don't use thin chips as they go soggy.

I dont think it could sit long enough to get soggy.. lol

Do you shred the chicken applied to the layers or just cut it up in chunks?

It cooks for about 7-8 hours in the crock pot so it shreds easily.

I did forget the cilantro on the list.
