Interesting read. I have rented both sit-on and sit in.  To me the two person sit-on is basically a canoe.  A few years back a friend was cleaning out their grown daughter's things from their basement and they ran across her sit in kayak. She no longer wanted it and they offered it to me. I had elbow and rotator cuff surgery and my physical therapist recommended a canoe or kayak. 

I load mine up and go the spillway boat ramp below the Lake Lanier dam for a workout. The boat ramp is about 300 yards from the "do not cross" line at the base of the dam. Going against the current it takes just over an hour to make it to the warning sign. I can make it back to the ramp in 5 minutes. I have also ran down the Chattooga River where they filmed the movie Deliverance. I have been debating whether or not to try the OCoee River where the 96 Olympics for Kayak was held. Depending on the water level they can have up to six class 5 and 11 class 4 hydraulics.

Future goals are to pick up a more touring style Kayak and actually go do some day camping over night or two on the Colorado River and see some caves, take some pics, sneak in some fishing, but mostly fun times with some of the fellas away from the ladies, good food, and some beer-thirty.

Before you even think about getting or using a kayak (or any other water craft) think about getting some professional training and certainly before going on water you are not recently familiar with, talk to people (lifeguards if available) who know the area and can advise you on the safe places to go.

I live close by the river Thames estuary and have done all my life - our rescue boats and hovercraft have a full time job saving the lives of people who think they can just go wherever they want on sailboards, canoes and dinghys, even on foot, and then get surprised by fast flowing tides that cut them off or sweep them out to sea!

A two-man version of that which could be put on a small offroad type trailer would be rather keen.  Probably not as practical where we are as far as use, I just think they're a cool and useful contraption.

And sadly unless I move to within the insides of the Gulf of Mexico in Florida or Texas, I'm not likely to get the 62ft, 3 level, Solar Catamaran Yacht to live on either.

One can dream still though, Fishing, sun, beers & great food for everyone..
