What your favorite trail meal? is it a full onslaught of a pre-prepped meal or is it just something that is a favorite among the usual day run or overnight thats simple and easy?

Do you actually stock an onboard fridge or strap down the cooler?



Personally for me the meals have been mostly pre prepped foil packs on a grill set up when going for more than a day, At any one time could be just chopped veggies/potatoes and some meat that's been generally precooked like chicken that I shredded. Then there's the full on packing of some small steaks, chicken, some easy to make rice or casserole dishes with tuna.

Sometimes if I am being lazy and or alone on the run with a couple guys, its a pack or two of Stadium brats, hit the grocery deli for stuffed chicken breasts/pork chops, maybe but rarely fish that I can share with the group. Seems everyone seems to bring a little of everything and i really try not to eat the freeze dried stuff unless going for a longer time out and even then its back and forth.

The eventual goal is to keep a cooler for the drinks readily available and easy grab and run and keep the fridge still yet to be financed with a mass majority of the slowly progressing bed work right now in the Flip-Pac.

Other times its just random snacks, raw veggies or fruit, maybe some sam-mich meat and cheeses, cashews, beef jerkie for the day run or a quick over nite.

it also varies time of the year, can goods seem to be too heavy to keep too much of and more trash to drag along the way and back due to treading rather lightly packing in & packing out.

Mean Bean Chili



Ingredients
  • 1 can of beans (we've used a 6 can bean medley, although kidney or pinto beans would work well)
  • 1 Onion, diced
  • Handful of green beans sliced
  • 1 Chili pepper, diced
  • 5-7 mushrooms chopped
  • 2 garlic cloves, minced
  • 1 can of diced tomatoes
  • Olive oil
  • Salt & Pepper
  • 2tsp chili powder/ground cayenne pepper
  • ½ tsp chili flakes (crushed red pepper)
  • 2 tsp dried oregano
 
TIP add some bacon, because everything taste better with bacon..
  1.  Heat oil in a saucepan and fry diced onion over medium heat.
  2.  Add green beans, canned beans, and chili pepper; cook for 3 mins
  3.  Stir through canned tomatoes, mushrooms, garlic and seasonings
  4.  Lower heat and, with a/the lid on, simmer ingredients for 10 mins
  5.  Remove lid and stir, then cook for another 5 mins to reduce sauce
  6. Serve over rice, corn chips, in tacos, or with salad
Serve hot and Enjoy!
