Mine run at like -3 to +3 for Short term fuel trims and damn near 0 for long term.
Anything less than -15 or positive 15 for a set time sets a code. Because they are all positive you are running extremely lean. That looks like extreme vacuum leak to me.
BTW that extra gear you feel is the torque converter locking up at highway speeds.
