There's a lot I want to know, but most of it has been cleared up by online reviews thankfully. Like any gun I'd consider, I want to know how it fits / feels in my hands, and how easily I'm able to manipulate it. Since it would be my concealed carry, I also would like to see the size of it in person, to see how concealable it would be on me (as I am skinny and having so much as a wallet in my pocket makes a noticeable bulge sometimes).

Since it's a mostly right-handed gun, I want to see how I feel about the slide release position. Whether I rack the slide or push the slide stop is usually 50/50, just whatever I feel like doing in that moment. I guess I don't really need to have an ambidextrous slide stop, but it's nice to have options, right? Maybe it fits in my hand just right that I don't even need to worry about it, like my Llama - even though its strictly a right handers gun, I can easily use every function with my pointer finger or thumb.

I know a lot of this is overthinking things, and most of that is brought up by never firing one and only going off of what fits me best by on paper stats, but I just want to make sure the firearm I decide to protect myself with is one suited well for me.

That's actually one of my bookmarked pages for when I am ready to start my build. What I am really liking though at the moment is F-1 Firearms and the skeletonized left handed parts they sell. Pricey, but high quality, light, and good looking.

I'd be looking at something like this but with a skeleton grip, different trigger, and possibly have the body dipped/anodized:

I've heard lots of various things about CZ, both good and bad, I aim to shoot one someday to see how I like their brand myself, but unfortunately all my friends go after S&W, Springfield, Walther, or an AR-15 variant.

You reminded me of a funny story... With my PPQ, the first time I took it shooting with a friend, I didn't think to mention the mag release was swapped over, and since they are right handed, when they went to swap mags, I got the best confused face I've ever seen in my life. (Maybe it isn't as funny a story as I thought)
