I want to go with 215/75/R15 tire on it. Is this possible with the stock steel rims?
The tire manufacturer's website will tell you the recommended max and min rim width for any tire model and size in their lineup. Check the Cert Label on your truck for the as-built rim width, then verify that it falls within that range.
